My bakery is new to the meat pie lines so I am hoping to get some tips from others. We want to freeze and package our meat pies. We will be doing 4 inch meat pies in our own foil/tins for sale and we wont be adding a top crust to the pie, just the bottom. We would like to freeze the pies right out of the oven without packaging.... Do we need to buy a Blast freezer to do this our would our regular freezer work for this? A blast freezer is a huge extra cost that we would like to avoid, but we also dont want our meet pies to get freezer burn or loose all their taste. Can anyone fill me in on what they do and how they go about it?
Since these meat pies will be a new line, we are planning to do 7000-15000 pies per week starting out. We dont want/cant spend a fortune on a huge expensive digital packaging machine, so can anyone give good recommendations that is fast and cost effective for packaging/wrapping thousands of pies per week something in the $1 - $8000US price range?
